There are several protocols for chatting over the internet — AIM, MSN, Yahoo, IRC, ICQ, and Jabber. iChat has always used AIM’s network, and as of 10.4 can also use Jabber. But if you want to chat over IRC, a protocol often used for privacy, you’ll need a separate app. Colloquy is the app I use for IRC, and I haven’t had any complaints about it.
