MacOSaiX is a freeware application that will let you create mosaic images out of other images. For instance, you can take all of the pictures of your San Francisco trip and make them into a large mosaic picture of the Golden Gate Bridge.
Mozodojo is another mosaic image maker and has been our most popular freeware post on FreeMacWare.com. But one feature that I like that is in MacOSaiX is that you can use images from a Google Image search. You just specify which search term you want to use.
(On a side note, Mosic posters make for a GREAT gift to family and friends.)
