There is certainly alot of freeware out there to control iTunes. (And we’d love to hear about them.) But X-Tunes is the one that i use to control iTunes.
When installed, a hotkey combonation (that you set) will activate a window to appear over whatever you are working on. From there you can control the music. X-Tunes runs as a background program and does not require a icon in the dock or menu bar.
